Way better than your average wheat or flour pancakes
Pancakes are one of the yummiest breakfasts I used to enjoy until I turned vegan. The problem was there was no good recipe that I could find that would make those perfect fluffy and light pancakes until I found this great recipe by Ms. Laura which is better than I could ever imagine.
The magic ingredient in this pan cake is sorghum flour which makes these pancakes so fluffy even without using any eggs. And another great thing about these pancakes is that they are 100% vegan and gluten-free. The pumpkin puree and pumpkin spice give it that unique and amazing taste that your kids will surely love!
