The recipe is simple and quick to make also. The fun part is this recipe is completely customizable, i.e. you can put in any veggies of your choice into a tortilla with some beans perhaps, roll them and start setting them in a baking tray. Pour the enchiladas sauce over the rolled tortillas with some mushrooms and diet cheese on top, and bake. Enjoy!
